One of the exercises in the first chapter of the book I’m working with on Microsoft Word 2007 suggested you could click anywhere on the ribbon to bring up the menu that allows you to customize the quick access bar.

If fact right clicking on several places of the ribbon will not bring up any menu at all. One of those spots is the white space (highlighted in dark blue above) just above the ribbon group (the Font group in this case). Right-clicking between ribbon groups also doesn’t bring up a menu. It might be better to say something like “right click on any of the ribbon bar icons,” though even this does not work because right clicking on any of the styles brings up a different menu.

I am nit-picking, but I’m doing so because the first thing I did was right click just above the ribbon group (within the ribbon). When that didn’t work I right clicked below, but not everyone is going to figure that out (even if it seems simple). Details, details, details.
